One time I had a late flight home from a long weekend in Vegas, and I was totally stressing out because I had been traveling all day and didn’t have any time to workout.
Even though I was totally exhausted, I felt like I HAD TO get to the gym. We landed at the airport at 9pm, headed for home, and while I was in the car I changed into workout clothes so Joe could drop me off right at the gym before it closed at 10pm.
When I got to the gym I hopped on the treadmill and ran until the gym closed. After that, since I didn’t get “enough minutes’ yet, I continued my run outside. Mind you, it was Boston winter at the time- 30 degrees and snowing. Continue reading “Confessions of a former Cardio Junkie”

Joe and I were traveling this past weekend and before we left I realized that we had a bunch of ripe fruit that I didn’t want to throw away so I decided to use them up by concocting a new muffin recipe.
We ended up bringing the muffins with us and they were gone by the end of our drive…They were so good! Give them a try and let me know what you think! 😉
1 & 1/3 cups GF pancake mix
1/3 cup brown sugar
3 tbsp butter, melted
1 medium ripe banana
1 large egg
1/2 cup 1% milk
1 tsp vanilla
1/2 cup blueberries
1/2 cup strawberries, sliced thin
