Banana Oatmeal Cookies (GF)

These cookies take less than 30 minutes to make, they’re super delicious, and they’re an awesome healthy alternative to regular cookies. (They’re also gluten free!)

BUT it’s definitely hard to eat just one…

Ingredients

2 large (or 3 small) bananas
2 cups oats
1 egg
1/3 cup coconut or canola oil

1/2 cup chocolate chips
1 tsp vanilla

Directions

Preheat oven to 350 degrees.

Place bananas in a large bowl and fully mash them up with a fork.

Mix the in oats with the banana. In a separate bowl, beat the egg. Add in the oil and vanilla and mix well. Then add this wet mixture to the banana/oats and mix well. Stir in the chocolate chips last.

Coat a baking sheet with cooking spray. Roll the dough into balls of the desired cookie size, and place on the baking sheet.

Cook at 350 for 12-15 minutes or until lightly browned.

You can eat these cookies warm, or (after they cool) you can throw them in the refrigerator. Putting them in the fridge will give them a different, thicker texture (I prefer them this way).
