Broccoli Cobb Salad

I’m a huge Cobb salad fan, because who doesn’t love adding bacon, eggs and cheese to a salad? I also got a new salad chopper recently, and had to put it to good use so I came up with this recipe and MAN OH MAN is it good!

Ingredients

2 medium broccoli florets
1 plum tomato
1/2 an avocado
5 pieces of bacon or turkey bacon, cooked
3 hard-boiled eggs
3oz blue cheese

Dressing Ingredients:
1 cup 2% Greek yogurt
1/4 cup water
2 tsp chives, fresh
1 tsp dill, fresh or dried
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp lemon juice
salt and pepper to taste

Directions

Combine all of the dressing ingredients first by stirring together gently, then whipping by hand to really mix in the water. Taste the dressing and add salt and pepper as needed.

If you don’t have a salad chopper, chop the following ingredients by hand:  broccoli, tomato, avocado, bacon, and eggs. Crumble the blue cheese and add to the mixture, then stir it all together.

Add the dressing and mix well.
