Joe and I were traveling this past weekend and before we left I realized that we had a bunch of ripe fruit that I didn’t want to throw away so I decided to use them up by concocting a new muffin recipe.
We ended up bringing the muffins with us and they were gone by the end of our drive…They were so good! Give them a try and let me know what you think! 😉
Preheat oven to 375 degrees.
Grease muffin tin or use muffin cups.
Mix together pancake mix and brown sugar.
In a separate bowl, mash the banana with a fork until chunks are fully broken down.
Stir the dry mix into the wet mix until fully combined.
Separately, mix berries with a tbsp of the pancake mix and then fold them into the wet mix (do this delicately so you don’t crush the berries).
Pour ingredients into the muffin cups and bake for about 18 minutes, or until golden brown on top.
