2 medium-sized sweet potatoes
2 tbsp olive oil
Mrs. Dash (or whatever seasonings you like!)
Preheat oven to 450 degrees.
Cover a baking sheet with tin foil and spray with cooking spray.
Scrub potatoes and pat dry with a paper towel. (You can peel the potatoes if you don’t like the skin, but I prefer to keep the skin on to get a little extra fiber, vitamins, and potassium.)
Slice the potatoes into french fry-sized pieces. Put the pieces into a big mixing bowl and sprinkle olive oil over the top. Use your hands to mix, making sure to coat all pieces with olive oil. Add desired spices and mix again.
Spread pieces evenly on the baking sheet and bake for 15-20 minutes.
Remove from the oven and sprinkle with salt.
